Watermelon Fruit Pizza
It’s watermelon season and we couldn’t be happier! This is a refreshing fruit dessert pizza that substitutes the classic cookie crust with a healthier watermelon crust. Make it for a Memorial Day cookout or to enjoy at home. Either way- it will be a big hit!
½ cup yogurt (we used dairy-free coconut yogurt)
1 teaspoon honey
1 large round slice of watermelon (about 1 inch thick), cut from the center of the melon
⅔ cup strawberries
½ cup halved blackberries
2 tablespoons torn fresh mint leaves
Combine yogurt, honey, and vanilla in a small bowl.
Spread yogurt mixture over the watermelon. Cut into 8 wedges. Top with strawberries, blackberries, and mint.
Freezing the melon for a brief time after adding the yogurt and berries will help the mixture stay put on the “pizza.”
