Recipe: Healthiest Granola Ever

We like adding granola to pretty much everything… yogurt, smoothies, salads… or eating it plain!  This granola recipe is both sweet, because of the dates, raisins and dried cranberries, as well as savory, because of the tahini.  You can vary it up depending on the dried fruit or nuts and seeds you choose to add. This granola would be a perfect snack to bring on an upcoming summer road trip… Grandma’s is coming up this weekend and we want you to be fully stocked on all the healthy snacks your ride up there and back!

INGREDIENTS

1 cup dates

½ cup tahini

3 cups old-fashioned rolled oats

1 cup raw mixed nuts (we used almond and cashew), roughly chopped

½ cup organic raisins (optional)

¼ cup dried cranberries

¼ cup raw sunflower seeds

¼ cup raw pumpkin seeds

¼ cup unsweetened shredded coconut

½ teaspoon cinnamon


INSTRUCTIONS

Preheat oven to 300 degrees.

Mix dates, tahini and 3 tablespoons water in a food processor and blend until creamy.

Move all ingredients to a large bowl and mix (easiest to mix using hands… but very messy) to combine.

Spread granola evenly on baking paper and press flat. Bake for 30 minutes, or until golden brown, stopping one or two times to stir and flatten again if needed to prevent burning and to ensure the granola cooks evenly.

Let cool enjoy!  Transfer to an airtight container to store.
