Recipe: Sweet Potato Breakfast Nachos

These nachos are packed with protein and filled with goodness. They make for a great savory breakfast or brunch. Sweet potatoes are an incredibly nutritious food that are packed with antioxidants like beta carotene, vitamins C, E & D, and minerals such as manganese and iron. They are also high in potassium which helps to lower blood pressure by removing excess sodium and regulating fluid balance in the body.

INGREDIENTS

2 large sweet potatoes, thinly sliced
1 tablespoon olive oil
ó teaspoon sea salt
8 ounces of meat or tofu
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon cumin
1 tablespoon olive oil
1 yellow onion, thinly sliced
1 bell pepper, diced
1 cup corn

Toppings:
Black beans
Avocado
Cilantro
Lime

Directions

  1. Preheat your oven to 450º.

  2. Thinly slice your sweet potatoes and spread out evenly on a baking tray. Toss with the olive oil and sea salt. Roast for 40-45 minutes, until crispy.

  3. Meanwhile, heat some olive oil on a large skillet over medium heat. In a mixing bowl, add your meat or tofu and seasonings. Brown the meat. If using tofu, mash with a fork until a scrambled consistency. Once mashed, cook on the skillet for 15-20 minutes, until firm. Set aside.

  4. Heat the 1 tablespoon olive oil over a medium heat on a different skillet, and cook onions for 10 minutes, until tender. Add on the bell pepper and corn, and cook for 5-10 more minutes.

  5. Once the potatoes are done, assemble on a plate and then layer on the meat/tofu, avocado, vegetables, black beans, and any other toppings. Enjoy!
