Recipe: Coconut Breakfast Bars

A follow-up from yesterday's post about limiting sugar, this recipe is one of our go-tos. 

Coconut Breakfast Bars Recipe via Fly Feet Running


  • 1/2 cup cashews
  • 1/2 cup shredded coconut
  • 1 ripe banana
  • 1 teaspoon vanilla
  • Pinch of salt



  1. Preheat your oven to or 350 degrees Fahrenheit. Line a mini loaf pan with baking paper overhanging the sides for easy removal.
  2. Place ingredients into your blender or food processor and blend until very well combined.
  3. Pour mixture into your loaf pan and smooth over the top. Bake for 25 minutes or until golden around the edges and an inserted skewer comes out cleanly.
  4. Allow to cool, chop into bars and enjoy!
