Curry Turkey Burgers and Mango Slaw

Here's an amazing meal in 30 minutes!


Burger Ingredients

  • 2 pounds ground turkey
  • 1 tablespoon red curry paste
  • 3 green onions, minced
  • salt to taste


Burger Directions

  1. Ppreheat oven to 400 F.  Line a baking sheet with aluminum foil, and top with the rack from a roasting pan.
  2. In a larget bowl, combine turkey, curry paste, green onions, and salt.
  3. Shape meat into patties and place on the roasting rack.  Bake the patties until the burgers are cooked through, about 20 minutes
  4.  Prepare the slaw while the burgers are cooking.


Mango Slaw Ingredients

  • 2 ripe mangoes, peeled and pitted
  • 2 red bell peppers
  • 1 English cucumber
  • 3 green onions, minced
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 2 tablespoons fresh mint leaves, minced
  • ½ teaspoon red curry paste
  • Salt to taste

Mango Slaw Directions

  1. Cut mangoes, peppers, cucumbers, and onions into thin strips and place in a large serving bowl.  Sitir in lime zest, lime juice, honey, mint, curry paste, and salt.
  2. Let marinate in the fridge for at least 15 minutes
