A follow-up from yesterday's post about limiting sugar, this recipe is one of our go-tos.
- 1/2 cup cashews
- 1/2 cup shredded coconut
- 1 ripe banana
- 1 teaspoon vanilla
- Pinch of salt
- Preheat your oven to or 350 degrees Fahrenheit. Line a mini loaf pan with baking paper overhanging the sides for easy removal.
- Place ingredients into your blender or food processor and blend until very well combined.
- Pour mixture into your loaf pan and smooth over the top. Bake for 25 minutes or until golden around the edges and an inserted skewer comes out cleanly.
- Allow to cool, chop into bars and enjoy!
