½ cup cashews
½ cup shredded coconut
1 ripe banana
1 tsp vanilla Pinch of salt
- Preheat your oven to or 350°
- Line a mini loaf pan with baking paper overhanging the sides for easy removal
- Place ingredients into your blender or food processor and blend until very well combined.
- Pour mixture into your loaf pan and smooth over the top.
- Bake for 25 minutes or until golden around the edges and an inserted skewer comes out cleanly.
- Allow to cool, chop into bars and enjoy!
