Grain Free Crusty Rolls

Ingredients

1 ¾ cups almond flour/meal
1 T coconut flour
¼ tsp sea salt
½ tsp baking soda
¼ cup unsalted butter, softened (or coconut oil, melted)
2 eggs, separated
½ tsp honey
1 tsp olive oil
½ tsp coarse sea salt

Directions

  1. Preheat oven to 350°
  2. Combine dry ingredients in a large bowl
  3. Beat egg whites in a separate bowl until soft peaks form
  4. Set aside
  5. Then add wet ingredients (butter or oil, egg yolks, & honey) to dry ingredients & mix until just combined
  6. Carefully fold egg whites into the dough & divide into four balls
  7. Place dough balls onto a cookie sheet lined with parchment paper, then use the palm of your hand to lightly flatten the balls
  8. Brush tops with olive oil & sprinkle with sea salt
  9. Bake at 350° for 15 minutes, until golden on top
